A pop-up restaurant with Tristan Welch and Alex Rushmer. For two nights only they will be cooking a four course menu made entirely of ingredients that would otherwise go to waste. The innovative menu will be crafted from leftover or unwanted produce donated by local suppliers with the dishes focused on unwanted vegetables, fruits, seeds and pulses as well as some overlooked cuts of meat.
This will be an excellent showcase of how much wonderful food could be made with overlooked ‘waste’.
All profits raised by the Rubbish Cooks pop-up will go directly to Wintercomfort and Cambridge FoodCycle.
