Food that could be considered to have the highest rating in terms of sustainability would have the following characteristics: Its method of production would be sustainable and it would have been sourced as locally as possible. With this in mind it is clear that in order for Cambridge to be a sustainable food city then the farmers and food producers who are local to Cambridge will have a vital role. There are already some organic farms local to Cambridge who try to market their produce locally wherever possible and CSFC will work with these farms to ensure that demand for their produce grows. CSFC will also encourage other local farms to consider adopting sustainable production methods and marketing their produce locally. It would also be good to engage with manufacturers of processed food products so that a range of convenience foods that adhere to the principles of sustainability might become available (e.g. a brewer using locally and sustainably produced barley).
