Co. opened its doors in July 2016, with an aim to be recognised as one of the city’s most sustainable, eco-friendly and forward-thinking daytime eatery, grocery, bakery, and events space. Only four months later, it has received the Cambridge Sustainable Food gold standard business award.

Co. offers an exciting mixture of sustainable, locally sourced and seasonal food, including coffee, locally brewed beer, baked goods, and fresh ingredients to take away. There is also a huge focus on healthier foods, superfoods, and vegan, vegetarian, refined sugar-free and gluten-free options. In a bid to keep their promise that all food will either be freshly prepared on site every morning, or made to order, they do not use any microwaves or bain-maries.

Co. also hosts a number of yoga sessions, art exhibitions, craft workshops and family-friendly events, all in an effort to connect with the local community and encourage ‘conscious living’ in all aspects of life. They place a heavy focus on recycling/upcycling and reducing their carbon footprint, and they are planning to put in place a zero waste policy later this year.

I was able to build the concept of Co. based on three things which are very important to me and what I wanted our brand to stand for; Conserve, Connect & Consume”.
