Refried Beans

This recipe is really versatile and it only uses a small amount of your oil ration! You can use any type of bean and spice, depending on what you have in your cupboard, and you could add some more fried vegetables if you have any that need using up. Once made, these refried beans can be frozen in portions and reheated later. You can enjoy them with vegetables, and in wraps, with rice or nachos.

1 onion, chopped

2 cloves garlic, chopped

400g tin kidney beans

200g tin sweetcorn

1 tsp cumin

1 tsp turmeric

200ml hot water with a stock cube dissolved in it

A good glug of vegetable oil

  1. Gently fry the onion and garlic in the oil
  2. Add the spices and cook for a couple of minutes more
  3. Add the drained beans and sweetcorn and stir to combine
  4. Add the vegetable stock, and allow to simmer for 10 minutes
  5. Once most of the liquid has boiled down, remove from the heat
  6. Mash the mixture or blend with a hand blender
